I have qualified with a diploma in Italy in 1990 as expert in hotel trade. Worked in various Hotels and restaurant in Rome, Capri, Venice, Milan and Naples in Italy. I have served in the Italian military special forces from 1991 to 1992.

After 1992 I have travelled and worked as chef in many European country like Switzerland, France, Spain and England. In 1995 I arrived in Australia and based myself on the Gold Coast, here I have worked as head chef in fine dining restaurants and even collected a few trades awards (Chain of Rotissier etc..)

In 2005 I qualified as Trainer and Assessor in commercial cooking and hospitality. In 2014 I was a finalist in V.E.T. training award in the Brisbane metropolitan area.
