What You’ll Learn:
Minimum age of 18 years
Year 10 Australian Senior High School Certificate or equivalent with full academic results
Lower-Intermediate English (equivalent to 4.5 academic IELTS)
Photo ID and evidence of citizenship (international students must provide copy of passport)
Basic computing skills including use of Microsoft Office programmes, in addition to hardware requirements of a portable computer with keyboard, pointing device, speaker, camera and microphone, and a broadband internet connection.
Applicants for this course must be able to make themselves available to undertake the industry placement that forms part of the training and assessment activity.
Students who are unable to meet the academic or English language criteria may in some cases be eligble to undertake our Language, Literacy & Numeracy (LLN) test. Criteria may change at any time without notice. Additional English language requirements may apply to international applicants from non-English speaking backgrounds wishing to articulate on a visa package into a university programme.

As a hospitality professional & master chef trainer over the last 30 years leadership of staff, management skills have Rewarded me with being able to mentor staff in food production operation,business, hospitality and clubs to maximize income and profit along with new and return business.
I have qualified with a diploma in Italy in 1990 as expert in hotel trade. Worked in various Hotels and restaurant in Rome, Capri, Venice, Milan and Naples in Italy. I have served in the Italian military special forces from 1991 to 1992.
After 1992 I have travelled and worked as chef in many European country like Switzerland, France, Spain and England. In 1995 I arrived in Australia and based myself on the Gold Coast, here I have worked as head chef in fine dining restaurants and even collected a few trades awards (Chain of Rotissier etc..)
In 2005 I qualified as Trainer and Assessor in commercial cooking and hospitality. In 2014 I was a finalist in V.E.T. training award in the Brisbane metropolitan area.
